Farm to table

You have not truly lived until you have eaten farm fresh bacon!!!
Our large black heritage pigs were 400lbs hanging weight (gutted, yucky innards removed).
We did not "love" having pigs on some days.  They escape when they are little, then when they are big, they are sooooo big, that it can be scary to deal with them.  But in the end, YES! we will do it again.
Our pigs cost $400, and butchering/processing was $392.  That, plus some time, table scraps, extra milk from our cows, and a little feed: here's what we ended up with.
50 lbs bacon, some packages a little larger
50 lbs of ham, sliced and in 2 to 3 lb packages
43 lbs sausage
64 lbs pork chops, in 2-3 lb packages
4 ribs
4 ham hock
4 neck bone
4 liver
36 lbs boston butt
Of course all cuts of meat at the grocery store are different prices, but our average is ....$3.05 per pound.
Plus 2 garbage bags full of fat to use in cooking and render into lard.  We feed only non-gmo feed to our animals, all kitchen scraps are organic and we do not use chemicals on our pastures.  We also took our own seasoning mix to the processor, with no msg's.  Knowing exactly what we are eating.....priceless!
